High-Protein Avocado Toast with Cottage Cheese & Tomatoes

A bright, classic avocado toast...cottage cheese mimics burrata while adding protein.
Ingredients (1 serving):
1 slice sourdough bread, toasted
½ ripe avocado, mashed
2–3 tbsp cottage cheese
5-6 cherry tomatoes, sliced
Flaky salt, to taste
Freshly cracked black pepper
Dried oregano (a pinch)
Balsamic reduction (drizzle)
Fresh basil, thinly sliced
Optional toppings:
Garlic powder (light sprinkle)
Everything but the bagel seasoning (for crunch)
Microgreens or sprouts
Instructions:
Toast the bread:
Toast sourdough to your preferred crispness.
Build the base:
Spread mashed avocado evenly over the toast. Sprinkle with flaky salt and black pepper.
Add creamy topping:
Spoon a generous dollop of cottage cheese over the avocado. Lightly spread or leave in the center for a "burrata-like" effect.
Add tomatoes:
Layer sliced cherry tomatoes on top.
Season & garnish:
Sprinkle with oregano and (if using) garlic powder or everything bagel seasoning. Drizzle with balsamic reduction.
Optional finishers:
Top with fresh basil ribbons or sprouts for color and flavor.
To serve like a brunch spot:
Plate with a small lemony side salad (mixed greens or arugula with olive oil + lemon juice or vinegar). Add a wedge of lemon or a light fruit garnish to elevate the presentation.
