Pink Deviled Eggs
Pink Deviled Eggs (Dyed with Beets)

Beet-Dyed Valentine's Pink Deviled Eggs Recipe

Prep Time: 30 minutes + chilling

Serves: 12 (24 halves)


Ingredients:

For the Eggs:

  • 12 large eggs, hard-boiled and peeled

  • 2 medium beets, peeled and roughly chopped

  • 2 cups water

  • 1/4 cup white vinegar


For the Filling:

  • Egg yolks from boiled eggs

  • 1/3 cup mayonnaise

  • 2 teaspoons Dijon mustard

  • 1 tablespoon white wine vinegar

  • Salt and white pepper to taste


For Garnish:

  • Mini Persian cucumber, thinly sliced

  • Fresh dill sprigs

  • Fresh chives or green onion, finely chopped

  • Baby arugula

  • Extra dill sprigs for platter


Method: Making Pink Deviled Eggs

  1. Make Beet Dye:

    • Simmer chopped beets in water and vinegar for 20 minutes

    • Strain and cool liquid

    • Reserve beets for another use

  2. Dye Eggs:

    • Place peeled eggs in cooled beet liquid

    • Refrigerate 30 minutes, turning occasionally for even color

    • For deeper pink color, leave eggs in beet juice longer

    • Remove and pat dry (Pat eggs very dry before filling to prevent liquid from seeping)

  3. Make Filling:

    • Halve eggs lengthwise

    • Remove yolks to mixing bowl

    • Mash yolks with mayo, mustard, and vinegar until smooth

    • Season with salt and white pepper

  4. Assembly:

    • Pipe or spoon filling into pink-tinted egg whites

    • Top each with a thin cucumber slice

    • Garnish with dill and chives

  5. Presentation:

    • Line serving platter with fresh arugula

    • Place eggs among greens and tuck dill sprigs between eggs

    • Serve immediately or chill until ready to serve
